Buffet food says "the (chef) cant be bothered to represent his culture or love of food by creating a unique dish. Dump some random food bits on plate and give me your money.

There's nothing "authentic" about refried and thrice reheated food scraps, I don't care if its called Indian or Chinese or Americana or whatever it's called.
